Celebrity TV Chef and Group Chef Director of country house hotels in Cornwall, Bath, the South Downs, Devon, Dorset, Canterbury and Southampton, James Golding, was quizzed by Queen’s on sustainability and his culinary journey to net-zero! A Fellow at The Royal Academy of Culinary Arts, and a regular on Channel Four’s ‘Sunday Brunch’, James manages the food operations at the multiple award-winning hotel group THE PIG.  This week saw him being interviewed by Olivia Richardson in Year 13 as part of her ‘Food, Science and Nutrition’ course with Head of Food and Nutrition, Mr Mann. In reply to Olivia’s questioning, James said he does everything he “can to source hyper-locally, seasonally, and preserve and enhance produce to ensure year-round  sustainable food supplies.”
